Hello,
currently I am trying to understand how the mechanism behind "Restricted Settings Menu" works, and if I can alter the setting in terms of
1.) which areas get disabled
2.) toggle the on/off of this feature on the device itself, like you can do it by toggling "privileged settings" through EHS, with the difference, that no EHS is used.

Hi,
Enterprise Home Screen's "System Settings Restricted" feature is available through OEMConfig in the Settings UI Configuration under "Use Reduced Version"
1) It is not possible to customize which specific areas of the settings screen are visible however quite a few other device settings can be disabled under that same OEMConfig for "Settings UI Configuration", for example disabling the user's ability to enter airplane mode.
2) OEMConfig is designed as a feature for the device administrator and so can only be toggled by an EMM console.  If you want to control these kind of features on device then you should use the EMDK SDK and its Profile Manager capability: https://techdocs.zebra.com/emdk-for-android/8-0/guide/profile-manager-gu..., specifically the Settings Manager and Access manager
