I seem to have got this working now.
In the AsyncHttpsTest example located in the API Samples, it had:
:ssl_verify_peer => 'false'
If I remove the quotes from around false, it then seems to work
:ssl_verify_peer => false
Hope this may help someone else.
By the way, I'm using Rhodes version 3.3.3.

Hash of headers to send with the request.
Callback action to execute when the request is done.
(optional) Send Basic Auth header with request.
(optional) Verify SSL certificates. Default = true.
