I have a customer that is struggling to get all "approved" apps going when AppCenter is in play. It seems they have apps that call sub-apps with a number of parameters and somewhere it stops working when AppCenter is installed, but fine without. What's the best way to troubleshoot? Detailed logging? It would be great if there was a learn mode, so a customer admin could start AppCenter, click "Learn Mode", run all the apps they need and then lockdown AppCenter with a policy created from the learnings.

Use the built in Debugging feature of Appcenter available. It will show you what windows are trying to be opened. Also keep in mind you can use wildcards when setting window title|class which may be required if they keep changing.
