I'm having trouble locating clear instructions in the docs about which SDKs, NDKs, JDKs and Rubies are compatible with which Rhodes version.
Currently, this seems to work for Rhodes 5.4:
- iOS 9.2 SDK
- Android SDK 5.1.1
- Android NDK 10e
- JDK 7u80
- Ruby 1.9.3
Is this configuration ok for Mac OS X? Ruby is especially old, but it seems that this is what needs to be used.

Not sure where you get Android NDK 10e. Did you see that documented somewhere? Isn't it still r9d?
I run under Ruby 2.3.0. I have to make a small change to the Gemfile to do so, because it calls for an older version of the json gem that isn't supported under 2.x. It seems to work fine with the latest version.
I publish a public fork of Rhodes that makes some very minor changes including the above. I haven't done this for 5.4, yet, nor have I tried 5.4. You can read about the changes in Issues 1 through 4 of my fork:
